INGREDIENTS

For Chicken Breast:

  • 2 Boneless skinless chicken breasts
  • Onion powder
  • Grounded black pepper
  • Kosher salt
  • Smoked paprika
  • Garlic powder
  • Garlic salt
  • Lemon pepper
  • ½ cup Grapeseed oil

For Dipping Sauce:

  • 50 g fresh cilantro
  • 1 spoonful fresh garlic
  • 2 spoonful mayo
  • 2 serrano chilies chopped
  • 2 small lemons juiced

INSTRUCTIONS

  1. Preheat the oven to 400 degrees F.
  2. Let the chicken breast sit out for 20 minutes before you start prepping. Pat them dry.
  3. Sprinkle all seasoning (onion powder, black pepper, salt, smoked paprika, garlic powder, garlic salt, lemon pepper) on each side of the chicken breast, and massage the chicken with your hands to coat it properly.
  4. Now, heat the grapeseed oil in a large skill, make sure that the oil is sizzling hot. Sear the chicken for 2 minutes on each side. Only flip it with a kitchen tong once it has done its time (2 minutes).
  5. Transfer the chicken breast into your baking dish and throw it into the oven to bake for 15 minutes.
  6. And now, for the sauce. Pluck the leaves from the stalk of the cilantro and throw it into your food processor/blender, measure in the garlic, mayo, serrano chili, and lemon juice. Blend into a smooth paste and transfer into a sauce bowl.
  7. Take out the chicken once it’s ready. Cut into thick slices and serve with the dipping sauce and your favorite sides.

Notes

  1. I didn’t measure any of the spices, but if you are heavy-handed and would like some guidance. I’d say you should do 1 teaspoon of everything except the salt and ground black pepper, so you can do about ½ teaspoon for both.
