In the south, it’s tradition to have black-eyed peas, collard greens, and cornbread before the new year. Today, I’m making cornbread to represent a prosperous new year. And because this is Bobby Boyd Living, we’re throwing in some bacon and jalapeños to spice it up!

EQUIPMENT

  • Cast-iron skillet
  • Egg whisk
  • Oven
  • Measuring cups and spoon
  • Mixing bowls

INGREDIENTS

  • 2 cups Cornmeal
  • 1 teaspoon Salt
  • ½ teaspoon Baking powder
  • ½ teaspoon Baking soda
  • 1 ½ cup Buttermilk
  • 1 small Egg
  • 1 jalapeno, chopped
  • 1 package Bacon, finely chopped
  • A bowl of bacon grease
  • ½ stick Butter, melted

INSTRUCTIONS

  1. Preheat the oven to 450 F.
  2. Allow the finely chopped bacon to fry without adding any cooking oil. Strain the grease and keep it aside. Transfer the fried, crunchy bacon into a parchment-lined bowl.
  3. Let’s mix all the dry ingredients. Into a large bowl, add the cornmeal, salt, baking powder, baking soda, crunchy bacon, and chopped jalapeno. Combine all the ingredients using a whisk.
  4. Place the skillet in the oven to preheat for a while
  5. Time for the wet ingredients. Crack the egg into a medium bowl and pour in the buttermilk and 4 tablespoons of bacon grease, then whisk to combine.
  6. Pour the wet ingredients into the dry and mix with the whisk until it is smooth and thick.
  7. Take out the skillet from the oven and place it on medium heat. Drizzle a tablespoon of bacon grease and transfer the cornbread batter into it. Use a spatula to spread and even out the surface.
  8. Place the skillet containing the cornbread batter back into the oven and let it bake for 20 minutes.
  9. Once it’s ready, drizzle on melted butter and enjoy it while it’s hot.
