INGREDIENTS

For Seasoned Beef:

  • 1 pound ground beef
  • 1 packet of taco seasoning

For Assemblage:

  • 1 (10 oz) can refried beans
  • 1 (15 oz) can enchilada sauce
  • 1 cup vegetable oil
  • 8 flour tortillas taco size
  • 1 (8 oz) bag shredded Mexican cheese blend

For Toppings:

  • 1 small red tomato diced
  • 1 cup sliced spring onions
  • 1 cup sliced dry olives

INSTRUCTIONS

  1. Open the canned beans into a small pot to cook under medium-low heat. You want the beans to be soft enough to be spread on the tortillas… Just like you spread butter, ketchup, mustard, etc. on bread.
  2. Time to brown the ground beef! In a large non-stick skillet atop medium-high heat, place the ground beef, then use a wooden spoon to crumble and stir it. Season with taco seasoning as soon as it starts to sizzle, and continue to stir until the meat starts to cook in its own juice. Reduce the heat to let it simmer and thicken for a while.
  3. Once the meat and beans cook to your desired softness and texture, you can turn off the heat. Using a strainer, drain the excess fat from the meat. Then set it aside until we are ready to construct the pizza.
  4. If you haven’t already, dice up the tomato, spring onions, and dry olives and set aside.
  5. Time to fry the tortillas. Heat the vegetable oil in a large non-stick skillet and place one tortilla at a time to fry for up to 3 minutes on each side, then repeat with the rest of the tortillas. Use a kitchen tong to flip them frequently so that each side can crisp nicely.
  6. Time to assemble this baby. To create the first layer, spread refried beans generously on each tortilla, top with 2 big spoons of the seasoned beef, then place another tortilla atop the meat to complete this layer.
  7. Now, spread 2 tablespoons of enchilada sauce over the tortilla. This would get a little messy, but whatever. Sprinkle a handful of the Mexican cheese blend on top of the enchilada sauce.
  8. Preheat your oven to 400 degrees Fahrenheit.
  9. Carefully transfer all the pizzas to a parchment-lined baking sheet. Then, put the pizzas into the oven to bake for 10 – 15 minutes so that the cheese can melt nicely.
  10. Your pizzas will come out looking crispy, cheesy, and delicious. Now, sprinkle a handful of all your toppings on top and place a spoonful of sour cream right in the middle of the pizzas.
  11. You can cut this up with a pizza wheel and serve with your favorite dipping sauce.
